Job Description / Responsibility
- Must improve current food and events menu, Menu must be implemented it right after joining; Introduce Monthly Chef Specials
- Must have certain specialties on specific type of cuisines
- Manages all kitchen operations including stewarding operations (maintaining hygienic standards and practices, staff training)
- Develop a more effective and innovative way to run the kitchen; Suggest improvements and possible renovations if necessary
- Implement and develop Periodic Marketing Plans to drive sales growth
- Ensure that all designated action points from daily briefings or -monthly operational meeting are being followed by the individual s concerned.
- Ensure that positive working relations with non Food and Beverage departments are fostered giving cooperation at all times.
- Handle customers comments and complaints and take swift corrective action
- Be responsible for and accountable for the overall food cost as well as kitchen supplies, kitchen energy costs and kitchen utensils.
- Constantly find ways to further improve the Food cost through strategic purchasing, without negatively affecting pre-determined quality standards.
- Constantly strive to reduce energy consumption through awareness campaigns within all kitchens.
- Complete detailed checks of the entire Food and Beverage operation during all service periods taking necessary action to correct any deviation from quality standards.
- Conduct weekly inspections of kitchen and restaurants with minuted follow-ups.
- Prepare and control daily and weekly market list.
- Conducts daily briefings for Sous Chefs.
- Ensure all staff actively participates in the preservation of the environment and reuse, recycle or reduce whenever possible.
- Accountable for the overall food cost as well as kitchen supplies, kitchen energy cost and kitchen utensils/ equipment
